Pumpkin Soup with Roast Kale
Ingredients
•1 large onion diced
•2 tablespoon spoons finely grated ginger
•2 tablespoon spoons crushed garlic
•2 teaspoons curry powder
•2 teaspoons cumin powder
•2 teaspoons coriander powder
•4 cups pumpkin
•1 cup sweet potato
•1 cups cauliflower stalk
•1 litre + veggie stock
•Salt and pepper

Method
Add the ingredients in the order listed, starting by sweating the onion, and lightly frying the ginger, garlic, spices.
Next add the veggies and stock to cover, season and simmer.
When veggies are very soft purée with your choice of instrument.
Return back to the heat, test for salt (remember you need to balance all those sweet veggies) and serve with a drizzle of coconut cream or yogurt and your crunchy spiced kale.
