Vegan Potato Gratin With Caramelised Onion and Thyme

Ingredients 

  • 1 1/2 kg potato’s

  • 2 cups of milk

  • 1/2 a cup melted vegan butter

  • 2 tsp salt

  • 1/2 a cup nutritional yeast

  • 1 1/2 tsp garlic powder

  • Pepper

  • 3 tbsp of thyme leaves

  • 100g home made vegan Parmesan (recipe on the web site) Optional

Caramelised Onion

  • 2 red onions

  • Tablespoon of vegan butter or olive oil

  • Pinch of salt

  • 1/4 cup balsamic vinegar

  • 1/4 cup brown sugar

Method

  1. Thinly slice the potatoes

  2. Melt the butter in a saucepan and in a medium size jug add all the remaining ingredients except the parmesan and whisk well

  3. Lay a layer of sliced potatoes, a crumble of parmesan and a 1/4 of the liquid mix.

  4. Repeat until all potatoes and liquid are used up.

  5. Place tin foil or a baking tray on top of the dish and place in the oven in 180 for 2 hours.

  6. Whilst it is cooking, make the caramelised onion by melting the butter or heating the oil.

  7. Slice the onions into thin strips and sweat them down with the help of the pinch of salt.

  8. When they are softened slightly, add the balsamic and sugar, turn the heat to low and let cook for 20 minutes or so, stirring regularly.

  9. To serve place a generous spoon full or two of the onion in top of a piece of gratin and sprinkle some extra thyme leaves on top.
