Lemon and Geraldton Wax Loaf
Ingredients
2 cups plain flour
1 cup sugar
1 tbsp baking powder
1/4 tsp turmeric
1 cup buttermilk (1 cups soy milk. 1 tablespoon lemon juice)
1/2 cup lemon juice
100gm melted butter
2 tbsp lemon zest
1 tsp finely chopped Geraldton Wax tips
Frosting
255g pack of vegan cream cheese
Zest of a lemon
1/2 a cup icing sugar
1 tablespoons lemon juice
Geraldton Wax flowers (optional)
Method
Make the buttermilk by combining the soy milk and 1 tablespoon of lemon juice.
Squeeze the juice from about 2 lemon or until you have half a cup of juice.
Whisk together all the dry ingredients
Make a well in the dry mix and pour in the buttermilk and the lemon juice and whisk through until just combined.
Immediately pour into a lined loaf tin and bake at 180 for 30 minutes covered with a tray or tin foil, and another 10 minutes uncovered.
When the cake has completely cooled, spread the frosting on top and decorate with Geraldton Wax flowers.
