Chickpea and Kale Burgers
Ingredients: Makes 5
Patties
1 tin of chickpeas, drained
1 cup of blanched kale or raw silverbeet leaves (de-stemmed)
1 onion, quartered
4 tbsp sunflower seeds
2 tbsp veg oil
2 tbsp soy sauce
1 tsp garlic powder
1 tsp chilli
1 tsp curry powder
1 tsp smoked paprika
1 cup bread crumbs (or stale bread)
Extras
Soft buns
Tomato
Guacamole
Siracha Mayo
Vegan mayo
Shredded cucumber
Beetroot
Caramelised onion
Basil
Or whatever salad and sauces you have in the fridge!
Method:
Add all ingredients to a food processor and pulse until it comes together and is well incorporated.
Ideally use a Tupperware burger making kit to form their shapes, otherwise put roughly 2 heaped dessert spoons of the mix in you hand and flatten.
Fry in a little veg oil and serve with vegan cheese melted on top, tomato, lettuce, caramelised onion, vegan mayo and chutney or sauce of your choice.
