Vegan Mozzarella Shakshuka
Ingredients (serves 8-10)
2 tbsp olive oil
1 onion
5 cloves or garlic
2 large red capsicums
2 tins crushed tomatoes
2 tins mixed beans or kidney or black beans
3 tsp sugar
1 1/4 tsp salt
1 tsp cumin
1 tsp coriander
1 tsp chilli flakes

Method
1. Make the mozzarella one day ahead, and ultimately the shakshouka sauce too as the flavours will develop.
2. Fry the onion in the olive oil until sautéed
3. Then add all the rest of the ingredients, combine and simmer with the lid on for 35 minutes at least on low. The longer you leave it he better it is.
4. When your ready to serve place the mozzarella balls in the sauce and put the lid back on for a further 10 minutes.
5. Serve with bread and if you like coconut yogurt mixed with chopped mint and/or parsley.
