My Favourite Mexican Beans
Ingredients
1 large onion
2 tablespoons tomato paste
2 heaped teaspoon each of ground cumin, coriander, smoked paprika
1 teaspoon chilli flakes
1 X 400g tin of crushed tomatoes
2 X 400g tins of beans of your choice (kidney, black bean etc)
2 tablespoon of balsamic vinegar
2 tsp raw/brown/rapadura sugar
1 generous teaspoon of salt
1 teaspoon chopped rosemary
2 teaspoons of crushed garlic
Method
1. Fry the onion, tomato paste and spices
2. Add the beans, tomatoes, balsamic, sugar, salt, rosemary, garlic and a splash of water.
3. Combine well and let simmer stirring regularly until most of liquid is gone and you have a bean mix that is not sloppy.
4. Use this bean mix to top nachos, scoop into tacos, or roll into enchiladas. Whatever you make your bean mix into it is great paired with these additional toppings.
Salsa (cucumber, tomato, peppers, mint and red onion)

Guacamole
Chilli sauce.
