My Favourite Mexican Beans⁣ by Olive wood vegan seasonal home grown produce

Ingredients

  • 1 large onion ⁣

  • 2 tablespoons tomato paste ⁣

  • 2 heaped teaspoon each of ground cumin, coriander, smoked paprika

  • 1 teaspoon chilli flakes ⁣

  • 1 X 400g tin of crushed tomatoes⁣

  • 2 X 400g tins of beans of your choice ⁣(kidney, black bean etc)

  • 2 tablespoon of balsamic vinegar ⁣

  • 2 tsp raw/brown/rapadura sugar ⁣

  • 1 generous teaspoon of salt ⁣

  • 1 teaspoon chopped rosemary ⁣

  • 2 teaspoons of crushed garlic ⁣

Method

1. Fry the onion, tomato paste and spices ⁣
2. Add the beans, tomatoes, balsamic, sugar, salt, rosemary, garlic and a splash of water.
3. Combine well and let simmer stirring regularly until most of liquid is gone and you have a bean mix that is not sloppy. ⁣
4. Use this bean mix to top nachos, scoop into tacos, or roll into enchiladas. Whatever you make your bean mix into it is great paired with these additional toppings.

  • Salsa (cucumber, tomato, peppers, mint and red onion)

  • Lime

  • Vegan mayo

  • Coconut yogurt

  • Guacamole

  • Chilli sauce.
